Chili

~1 1/2 pds lean ground beef

~1/2 teaspoon garlic powder

~1/2 medium onion, finely diced

~1/2 teaspoon cayenne pepper

~1/4 bell pepper, finely diced

~1/2 teaspoon Worcestershire sauce

~1 small can tomato sauce

~1 can Rotel tomatoes, diced

~Salt and pepper to taste

 

Saute onions and bell pepper until clear, add meat and cook until browned. Add tomato sauce and rotel tomatoes, cook for a few minutes. Add remaining ingredients. Bring to a boil and lower heat and simmer. Add water as needed. Cook for 1 1/2 hours.

Sweet Potato Casserole

~2 large cans yams

~1/2 large can evaporated milk

~2 eggs

~2 tablespoons vanilla

~1/4 c. brown sugar

~1/2 c. sugar

~1/2 stick butter

Preheat oven to 375 degrees. Drain yams, place in mixing bowl and mash. Add milk, eggs, vanilla, brown sugar, sugar and melted butter. Mix well. Consistency should be thick. Pour into 8×8 inch baking dish.

Topping:

~1 stick butter

~1 c. brown sugar

~1/3 c. sugar

~1/3 c. pecans

Mix topping ingredients well. Should be thick and lumpy. Spoon pecan mix over top of yams. Bake in oven for 40 minutes, or until yams are firm.

Easy peanut butter cookies

 

Peanut Butter Blossoms

~1 (14oz) can sweetened condensed milk

~3/4 cup creamy peanut butter

~2 cups biscuit mix

~1 tsp vanilla extract

~sugar

~66 milk chocolate kisses, unwrapped (optional)

 

Combine condensed milk and peanut butter in a large mixing bowl. Beat at medium speed with an electric mixer until blended. Add biscuit mix and vanilla ; beat well.

Shape mixture into 1 inch balls; roll in sugar. Place 2 inches apart on ungreased baking sheets. Dip a fork in sugar, flatten cookies in a crisscross design. Bake at 375 for 6 to 7 minutes. After removing from oven, immediately press a chocolate kiss in the center of each cookie, if desired. remove cookies to wire racks to cool completely.

Chocolate Cream Cheese Pie

 

 

~2 pkg. Jell-O chocolate pudding

~1 graham cracker pie shell

~2 (8oz) pkgs. cream cheese

~1/2 cup sugar

~1 (8oz) Cool whip

~Any type of candy bar (hershey’s, Kit Kat, etc)

 

Mix the cream cheese, sugar and 1 tablespoon of cool whip together. Layer in pie shell. Mix jell-o  according to package. Spread over cream cheese mixture. Spread remaining Cool Whip over the chocolate pudding mixture. Crumble up any kind of chocolate bar and sprinkle over the cool whip.

Lazy Lasagna

~1 1/2 lbs ground beef

~1 jar (32oz) spaghetti sauce

~1 lb cottage cheese

~8 oz sour cream

~8 lasagna noodles, uncooked

~3 pkgs (18oz) Mozzarella cheese, sliced

~1/2 cup parmesan cheese

~1/4 c water

 

Cook beef. Drain fat, add spaghetti sauce and reduce heat. Combine cottage cheese and sour cream in bowl. Layer, 1/2 meat, 4 lasagna noodles, half of cheese mixture, 3-4 slices mozzarella, 1/2 cup parmesan  and rest of meat. Repeat starting with the noodles. Top with 3-4 slices of cheese. Pour 1/4 cup water  around sides of pan. Cover tightly with foil and cooked covered for 1 hour at 350 degrees. Remove foil and cook an additional 20 minutes.

Chicken Spagetti

I also love this one. My kids love it too!

~4-5 boneless chicken breast

~4 green onions

~1 green bell  pepper

~1 1/2 lbs. velveta cheese

 

 

Boil bonelesschicken breast, green onions and bell pepper until done. Remove chicken and cut it up, put chicken back in broth and add spaghetti noodles. boil until done. Add cheese to spaghetti and chicken cook until cheese is melted.

Chicken Casserole

~2 whole chickens

~2 cans cream of mushroom soup

~2 cans cream of chicken soup

~1 sm container sour cream

~1 can chopped water chestnuts

~1 can english peas (optional)

~4 pkg. ritz crackers

~1 stick butter

 

 

Boil chickens, cool, remove skin and debone. Place chicken in large bowl.Add soup, sour cream, water chestnuts and peas if desired. Mix well. In another bowl, Crush ritz crackers and add melted stick of butter. Mix well and pour half the cracker mixture in bottom of medium size casserole pan. Add chicken and soup filing and top with remaining cracker mixture. Bake at 350 for 30 minutes.

Meat Loaf

 

 

 

This is great as a main dish. It’s easy to make and taste pretty good. Their is never any leftovers at my house. Everybody loves it!

~3 pds ground beef

~1 cup celery, chopped

~1 med. large onion, chopped

~2 eggs

~2 cups ketchup

~1 tsp salt

~1 cup breadcrumbs

Combine all ingredients. Mix well, shape into loaf. Cook at 350 degrees for   1 -1/2 hours. Drain fat from pan. Brush lightly with ketchup. Return loaf to oven until ketchup is glazed. Take out and enjoy!

Sausage Gravy

~3/4 pound pork sausage

~1/4 cup all-purpose flour

~2 cups half-and-half or milk

~1 tsp salt

~1/2 tsp pepper

Brown sausage in a large skillet, stirring until it crumbles. Drain the sausage, save 1/2 cup dripping on skillet. Whisk flour into sausage drippings until smooth. Cook on med high heat whisking constantly, 3 min until browned. Stir in sausage. Gradually add half-and-half or milk and cook over med heat stirring constantly, until thick and bubbly. Stir in salt and pepper. Serve with biscuits.
